I go through phases with meal prep. Sometimes I’m fully on it: week to week I have my containers lined up, groceries prepped, feeling like the most organized version of myself. And other times… I’m just absolutely not feeling it. This Chicken Shawarma Bowl is what brings me backkkk.
It’s the kind of meal prep that doesn’t feel overly ambitious or like a full Sunday production, but still sets you up in the best way for the week ahead. The kind where you spend maybe 30 minutes in the kitchen and suddenly the week is taken care of.
I started making this when I wanted something that felt a little more exciting than my usual rotation, but still just as easy. Something with bold flavor, a mix of textures, and that actually holds up for a few days in the fridge without getting weird. And now it’s one of those recipes I come back to anytime I want to reset.
It has everything I want in a meal prep: something warm, something fresh, and something that feels satisfying but not heavy. It’s also super customizable depending on what you’re in the mood for that week. Sometimes I like to do hummus and labne for toppings, and other times I love a good tahini drizzle.
