The second it starts feeling like spring, I stop wanting so many cooked meals. Not in a dramatic way… but I just don’t want anything heavy or complicated. I want things that feel fresh, easy, and require minimal effort.
And every year, without fail, I end up back in my sandwich phase. It’s really not even intentional. It just kind of happens. I’ll make one for lunch, remember how good it was, and then suddenly I’m making a variation of it every day that week.
Maybe it’s just me, but I feel like sandwiches sit in that perfect middle ground. They’re not as light as a salad, but they’re also not a whole production. You can keep them simple, but they still feel like an actual meal… and they always hit the spot.
Like when nothing sounds good? A sandwich does 100% of the time.

This one always makes me feel like I’m eating a sandwich somewhere in Italy… even if I’m just standing in my kitchen. There’s something about it that feels simple but really good in that effortless way. It’s one of those sandwiches that doesn’t try too hard, but somehow still feels a step up from basic (and I end up making it on repeat because of it).

This is peak warm-weather energy to me. It’s the kind of sandwich I make when I want something fresh and a little different, but still easy. I may be jumping ahead a season, but It just feels like the kind of thing you’d pack for a beach day. Simple, a little elevated, and actually something you’d look forward to eating.

This one is inspired by a sandwich I get on vacation every single year, and at this point, it’s not even optional. I fully look forward to it. It has that slightly fall-feeling combo, but it’s the perfect mix of cozy and fresh. I end up making it year-round because it just works.

This is what I make when I want a sandwich but also want to keep things lighter. It still hits like a real sandwich, just without the heaviness. I go through phases where I make this on repeat and don’t get sick of it.

This is my “this isn’t really a sandwich but I’m counting it anyway” option. It’s more fun, a little chaotic, and the one I make when I want something that feels less like a routine meal and more like a vibe. Perfect for lunch or even a spring/summer get-together. Heads up – it’s very hard to stop at just one.
