Anything that falls into the taco-adjacent, bowl-adjacent, loaded-with-toppings universe is automatically in my weekly rotation. It’s the kind of food that feels fun, a little customizable, and somehow always hits, whether it’s a random Tuesday night or you’re having people over.
And honestly, I don’t really separate “occasion food” from “everyday food.” The same recipes I’d make for something like Cinco de Mayo are the exact ones I’m throwing together on a busy weeknight or craving on a Sunday afternoon.
