I don’t know about you, but coming up with dinner ideas is always so much harder for me than actually making dinner.
I’ll spend 20 minutes scrolling through recipes, searching for dinner ideas, checking what’s in the fridge, considering takeout, and somehow end up right back where I started. So whenever I hit one of those weeks, I fall back on a handful of recipes I know I’ll actually be excited to eat.
These are the dinners that I’m currently falling back on. They’re flavorful, easy enough for a weeknight, and don’t require a grocery list full of ingredients you’ll never use again. Some are fresh and light, some are inspired by my favorite takeout orders, and ALL of them are recipes I’ve made more than once, so I know I’ll love it again and again. This one always feels fancier than the amount of effort it actually requires. The salmon and asparagus cook together on a sheet pan while the pesto orzo comes together in minutes, which means minimal cleanup and maximum reward. I love making this during spring and summer when I’m craving something lighter but still satisfying. It’s fresh, bright, packed with protein, and somehow tastes like something you’d order at a restaurant.

I will never stop finding ways to put a new twist on the classic caesar salad!!
This one has all the things I love about Caesar, but the gochujang adds just enough heat and flavor to make it feel completely different. Plus, it’s hearty enough for a salad to fill you up, which is probably why I keep coming back to it. If you’re trying to work more vegetables into your week but still want something satisfying, this is the move. Plus, it comes together ridiculously fast.
